Sodexo is seeking a talented, experienced Executive Chef to help oversee culinary operations at Oral Roberts University in Tulsa, OK.
Oral Roberts University is the premier Christian university in America's heartland with approximately 4,000 students and a 40+ year relationship with Sodexo! Part of the University's mission is to "educate the whole person - spirit, mind, and body", and Sodexo works closely with the school to ensure that students' needs are met at an exceptional level in every aspect. Sodexo also manages campus facilities on the ORU campus, including physical plant, landscaping, housekeeping, and general maintenance.
The Executive Chef will play an integral role in developing menus that capture modern trends with a focus on health and wellness and "clean" food preparation. Solid classical training is a plus, with an emphasis on modern techniques, presentation, and demonstration cooking. As in most professional kitchens there are excellent opportunities to identify, educate, and retain quality staff! The total number of staff that reports to the Executive Chef directly is approximately 25 cooks and utility workers.
The Chef reports directly to the Director of Operations, and with the assistance of a Production Manager will oversee culinary operations for the Student Cafeteria, as well as all food items for Catering. The President's Office entertains frequently, and there are ongoing opportunities to develop custom menus for those functions both seasonally and per-event. We host a number of major local events throughout the year that are catered for private clients, so there is a need to be competitive with other local caterers regarding food quality, menu options, and profitability. There may be minimal support to portions of our retail operation.

Provides culinary leadership within a medium sized unit including menu planning, program execution and staff management & training. Works directly with internal and external clients managing the catering process from beginning through execution.
Implements & coordinates the culinary function.
Directs & trains cooks & utility workers.
Ensures food preparation & production meets operational standards.
Manages catering & retail areas.
Customer & Client satisfaction.
Financial management to include food cost & labor management.
Manages food & physical safety programs.
Qualifications & Requirements
Basic Education Requirement - Associate's Degree
Basic Management Experience - 2 years
Basic Functional Experience - 2 years work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
